Kimchi Fried Rice

Found my recipe in one of my old hard drive 🙂

ingredients: (serves 2)
1/4 onion finely chopped
teaspoon of minced/crushed garlic
tablespoon of extra virgin oil
chopped kimchi about 1 cup and kimchi juice (can vary, depending on taste and spice)
minced beef 50g
2 cups of leftover rice (day old rice is good)
soy sauce
salt and pepper to taste

variation:
– add red pepper paste for extra spicyness (from korean shops)
– replace minced beef with spam
– if you are vegetarian, dont add the onions/beef

heat oil in the pan until hot, put the garlic in.
add the onions stir fry untill slightly brown.
add the minced beef, keep frying until all the beef is brown
add the kimchi and keep stirring for about 30 seconds
add the rice and break the rice, add the kimchi juice and soysauce
continue stir frying until everything looks mixed in then add salt and pepper to taste
